Monday

Lunch: Bean and Cheese Enchiladas with Guacamole & Shredded Salad

These casserole style enchiladas are made with soft corn tortillas filled with pinto beans, black olives, spinach and cheddar cheese, covered in a mildly seasoned tomato sauce. We add a side of guacamole made with fresh avocados and touch of spirulina.

This delicious salad is made with finely grated red cabbage and carrots tossed with lemon juice and tamari, served on a bed of finely chopped spinach.

Dinner: Grilled Artic Char & Herbed Quinoa with Julienned Red Pepper and Cucumber

Our fresh artic char is lightly grilled in olive oil and seasoned with lemon and sea salt.

Nutty quinoa is enlivened with fresh thyme, parsley and garlic. We add julienned red pepper and crisp seedless Persian cucumbers for finger food.

Tuesday

Lunch: Peach Noodle Kugel & Swedish Meatballs

This delicious comfort dish is an old German recipe made healthier by adding fresh peaches and wheat germ. We also reduced the sugar, and replaced half of it with maple syrup.

Our Swedish meatballs are made with organic grass fed grade A ground sirloin and seasoned with Italian parsley and onion. We add a small amount of organic chicken liver that tastes amazing and adds lots of vitamin A and iron.

Dinner: Peanut Butter Yam Soup & Saffron Basmati Rice with Jicama Slivers

This creamy pureed soup is fashioned after the traditional Senegalese peanut butter stew. It features baked yams, peanut butter, Roma tomatoes, coconut milk and fresh cilantro.

Fluffy jasmine rice is tossed with a touch of cultured butter and fragrant saffron.

Crunchy jicama slivers are perfect for dipping in soup!

Wednesday

Lunch: Chinese Egg Fried Rice & Sautéed Cauliflower and Broccoli Florets

This well-balanced dish features rice, eggs, peas, red pepper, carrots and scallions, and is delicately seasoned with sesame oil and tamari.

We lightly steam the freshest organic broccoli and cauliflower and chop into little florets perfect for tiny hands.

Dinner: Carrot Cashew Ginger Soup, Lemon Sole & Shredded Salad

This pureed soup is a delicious blend of carrots, cashews and a hint of ginger.

Our Lemon Sole is a delicate baked filet of sole, seasoned with a touch of lemon.

This delicious salad is made with finely grated red cabbage and carrots tossed with lemon juice and tamari, served on a bed of finely chopped spinach.

Thursday

Lunch: Sesame Chicken Fingers with Honey Mustard Dipping Sauce, Potato Fennel Soup & Shredded Salad

Organic free range chicken breasts are hand cut into “fingers” and made healthier and tastier by adding sesame seeds. Our homemade honey mustard dipping sauce compliments them perfectly.

Fragrant fennel bulb and russet potatoes pureed together make for a light refined soup. Sweet white Vidalia onions and a hint of caraway seed add subtle flavor.

This delicious salad is made with finely grated red cabbage and carrots tossed with lemon juice and tamari, served on a bed of finely chopped spinach.

Dinner: Wholegrain Noodles with Veggie Tofu Sauce and Steamed Broccoli

Wholegrain noodles are smothered in a delicious homemade tomato sauce featuring tofu, zucchini and carrots.

A side of perfectly steamed organic broccoli is a healthy and delicious addition.

Friday

Lunch: Lentil Soup, Sweet Potato Fries & Shredded Salad

This mild lentil soup is made with French green lentils, carrots, celery, chard and a hint of onion, garlic and oregano.

Hand cut sweet potatoes are oven baked and seasoned with a sprinkle of Celtic sea salt and extra virgin olive oil.

This delicious salad is made with finely grated red cabbage and carrots tossed with lemon juice and tamari, served on a bed of finely chopped spinach.

Dinner: Lamb Patties, Shitake Stir-fry & Olive Oil Mashed Potatoes

Our grade A organic ground lamb is ethically sourced from pasture raised sheep. Hand shaped patties are sprinkled with mineral rich Celtic sea salt and pan-fried.

Antioxidant packed shitake mushroom are lightly sautéed in cultured butter.

Our creamy and delicious mashed potatoes are made with Idaho potatoes, extra virgin olive oil, and a touch of fresh cream and black pepper.
